A packet of Feta Cheese
A handful of Cherry tomatoes
Half a pepper (red or green)
Salt - Pepper
Cut peppers into rings.
Cut cherry tomatoes in half.
Place them onto a piece of tin foil, large enough to cover the ingredients.
Crumble up the feta cheese and put over the top of the vegetables.
Sprinkle with olive oil, salt and pepper and oregano. Fold over the tin foil to form a "package". Make a couple of small holes for air, using a fork.
Bake in the oven for 20 min, 180 degrees C
Serve with low carb pita bread if desired.
Being Greek, I would advise authentic Greek Feta Cheese but Tesco one isn't bad at all!
