Lemon Pasta with Salmon

INGREDIENTS

680 grams Atkins penne
4 salmon fillets, 3/4-inch to 1-inch thick (about 680 grams)
2 teaspoons extra-virgin olive oil
Salt and freshly ground black pepper
3 tablespoons freshly squeezed lemon juice
2 tablespoons unsalted butter
1 teaspoon freshly grated lemon zest
2 (8 oz.) bottles clam juice
236 ml heavy cream
2 tablespoons ThickenThinTM Not Starch or similar
76 grams fresh dill, chopped
227 grams frozen peas, blanched (optional)

METHOD

1. Preheat broiler. Prepare pasta according to package directions; drain and transfer to a large bowl.
2. While pasta is cooking, brush salmon with oil and sprinkle with salt and pepper to taste.
